Critical Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation. Raw sausage was stored over RTE food in reach in cold holding unit. The PIC immediately corrected the issue once the violation was identified.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Facility not maintained clean in hard to reach areas under equipment and surfaces over pizza oven. HVAC ducts are not clean.

3717-1-06.4(A) / Repairing.
Repeat Physical facilities not maintained in good repair. There are multiple areas throughout the facility with damaged floors, coved base, walls, and lights. Facility surfaces are not smooth, durable, and easily cleanable.

Light intensity less than fifty foot candles in food preparation areas.
