3717-1-03.2(Q) / Food storage - preventing contamination from the premises.
Improper storage of food items. Observed stored opened perforated bag of spinach in the walk-in.

3717-1-03.2(K) / In-use utensils - between-use storage.
In-use utensils improperly stored. Observed knife being stored in green container with sanitizer water at the end of the make line. Ensure the knifes are being air dried before use. The utensils shall be cleaned and sanitized every 4 hours.

Ensure the bulk lettuce or cut leafy green bags are being transported into a food safe container (perforated bags are not acceptable) and proper dated with the day of opening within 24 hours of preparation.
Dish machine shall have a audible or visual alarm to notify user that the sanitizer and detergents are out.
The violations documented are to be corrected and will be checked at the next standard inspection.
