To ensure that refrigerated time/temperature-controlled for safety (TCS) food is maintained at an acceptable temperature that is 41°F or less, this equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code. Kitchen appeared to be clean and well-organized at the time of inspection. Observed an employee cooking chicken to an acceptable temperature and correctly measuring the internal food temperature with a metal stem thermometer. Ensure food equipment that is not washed in the mechanical dish washer is washed, rinsed, sanitized, and allowed to air dry using the designated 3 compartment warewashing sink. The 2 compartment sink may be designated as a handwashing sink if it is used for no other purpose. |
