[?] A summary of the violations found during the inspection are listed below.

3717-1-03.4(H)(1) / Ready-to-eat, time/temperature controlled for safety food - disposition.
Critical Corrected During Inspection Observed ready-to-eat, TCS food (ham) that had been date marked was not properly discarded when required at the time of inspection.
To prevent illness, refrigerated, ready-to-eat TCS food that has been date marked in the facility shall be discarded if it: (a) exceeds the temperature or time specified in (G)(1) of this rule, except the time the food is frozen; (b) is in a container or package that does not bear a date or day; or (c) is marked with a date or day that exceeds the time and temperature combination specified in (G)(1) of this rule. A food employee voluntarily threw product away. Recommend designating an employee to verify all date marked food does not exceed the 7 days discard date.
3717-1-05.1(O)(2) / Using a handwashing sink - other uses prohibited.
Critical Observed a handwashing sink being used for purposes other than handwashing at the time of inspection. Employee was using sink to rinse and clean a wiping cloth.
To prevent contamination, a handwashing sink may not be used for purposes other than handwashing. Discontinue using handwashing sink for anything other than handwashing.

3717-1-04.1(KK) / Food equipment - certification and classification.
Repeat Observed equipment (household refrigerator, chest freezer) that was not approved by a recognized testing agency at the time of inspection.
To prevent health hazards, food equipment that is acceptable for use in a FSO or RFE shall be approved by a recognized food equipment testing agency. Approved commercial equipment shall be used.
3717-1-05.1(Q) / Scheduling inspection and service for a water system device.
Observed a water treatment device for the ice machine not inspected or serviced as required at the time of inspection.
To prevent health hazards, a device such as a water treatment device or backflow preventer shall be inspected and serviced in accordance with manufacturer's instructions and as necessary to prevent device failure, and records demonstrating inspection and service shall be maintained by the person in charge. Water treatment device shall be serviced when required.
3717-1-06.2(I)(2) / Lighting - intensity (20)
Observed the measured light intensity inside the reach-in cold holding unit (0-5 fc) that was less than twenty foot candles at the time of inspection.
To prevent health hazards, the light intensity shall be at least twenty foot candles (two hundred fifteen lux): inside equipment such as reach-in and under-counter refrigerators. Provide proper lighting to meet the requirements of this rule.
