Critical Corrected During Inspection Handwashing sink is being used for purposes other than handwashing. Observed hotel pan in the handwashing sink at grill finish area. PIC removed the pan and will discuss proper use of handwashing sink with employees.

3717-1-02.2(G) / Jewelry - prohibition.
Food employees (student workers) wearing jewelry on arms or hands during food preparation.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of the ice machine (lid) and underneath/around the pizza oven not maintained clean.

Ensure cutting surfaces that are contacted with tcs foods are being warewashed every 4 hours.
Recommend providing a small cutting board that can be easily removed to be warewashed at the required frequency.
Ensure working containers are properly labeled with the common name of the product.

The violations documented are to be corrected and will be checked during next inspection.
Food Process Reviewed: Time instead of temperature for public health control procedure (4-hour hold) for the pizza operation.
