Ensure that proper hot/cold holding procedures are followed during the lunch/dinner service. TCS foods are not permitted to be held between 42-134 degrees F at this time. Recommend upgrading the FSO to a risk class IV facility to take advantage of a time instead of temperature control procedure for food safety.
