[?] A summary of the violations found during the inspection are listed below.

3717-1-02.2 (E)(1)(C) / Hand antiseptics - applied to clean hands
Corrected During Inspection Food employee applying hand antiseptic to unwashed hands.

3717-1-05.1(L) / Handwashing sinks - location and placement.
Handwashing sinks are not conveniently located for the warewashing area. An additional hand washing sink shall be provided in the warewashing space. This was not documented during the facility review and can be addressed at a later time (add to the corrective action plan).

3717-1-02.2(G) / Jewelry - prohibition.
Corrected During Inspection Food employees wearing jewelry on arms or hands during food preparation.

3717-1-04.8(E)(3) / Single-service articles and single-use articles - storage.
Single-service and single-use articles not protected from contamination. Single use beverage containers were stored on the cafe prep counter without protection from contamination. The lip contact area shall be protected. Observed employee handle the lip contact areas on containers and lids with without gloves.

3717-1-04(I) / Nonfood-contact surfaces - materials.
Nonfood-contact surfaces constructed of unapproved materials. Observed concrete construction blocks are used to elevate the Maxx Cold reach-in and Ice maker/bin. Owners plan to correct this once they are able.

3717-1-04.1(H) / Nonfood-contact surfaces - cleanability
Nonfood-contact surfaces not easily cleanable. Observed the Concrete cafe counter tops to be warn, pitted and in need of repairs/replacement at the time of inspection. Owners have plans to address the issue when able.

3717-1-04.3(C) / Fixed equipment installation: elevation or sealing.
Equipment not properly elevated or sealed to floor. Cold display was not easily movable, elevated 6 inches above the floor. Equipment does not allow floors to be easily cleaned.

3717-1-04.1(KK) / Food equipment - certification and classification.
Equipment not approved by a recognized testing agency. Cold holding unit in the cafe preparations area used to hold TCS milk, creamers, whip cream, etc. is not designed to be holding open TCS food containers. Owners have plans to replace the unit when able.

3717-1-06.1(A) / Floors, walls, and ceilings.
Floors and walls were not smooth, durable and easily cleanable in the back dry storage room. Observed walls were not painted, no coved based finish and floors not to be properly sealed. Owners have plans to correct this once able.

3701-21-25(I) / Person in charge certification in food protection
FSO did not have a person in charge per shift with the person in charge certification in food protection. Owner stated they would like to attend a upcoming class when available.

Comments
FSO is under new ownership. Owners and employees demonstrated knowledge regarding food safety. Many of the staff is PIC certified and was able to answer questions correctly.
Continue to work correcting violations documented in this inspection and verbal items discussed during the inspection.

Observed the FSO to clean and organized.
Staff and owners demonstrated significant effort in regards to COVID-19 prevention.

All Violations documented in this report will be rechecked at during the next standard inspection.
