Operation has a written illness policy on file. PIC is aware of reportable illnesses and the symptoms associated with reportable illnesses.
PIC is certified in food safety and demonstrated satisfactory knowledge at the time of inspection.
Discussed hygienic practices regarding proper handwashing and glove use, keeping fingernails trimmed, clean, and unpolished, limiting jewelry worn to no more than a plain wedding band.
Operation receives donated food from multiple sources, including the Akron/Canton Food Bank, licensed food operations in Kent and Cuyahoga Falls. Discussed sound receiving procedures and making certain that prepared foods that are received have been properly date marked. Recommend asking food donors questions about how prepared RTE TCS foods have been handled (cooling procedures, dates prepared, dates frozen, etc).
PIC stated that food temperatures are taken when food is received.
Operation maintains daily temperature logs on all refrigeration equipment.
