Consultation was in regards to operation wanting to sell hot held time/temperature controlled for safety foods (TCS). TCS foods will be supplied from licensed restaurant next door called Szechuan Gourmet (same owner). Szechuan Gourmet will need to acquire a proper license from the Ohio Department of Agriculture. Contact them ASAP to register. Before this procedure can occur, provide documentation that ODA has given approval. Kent food Market will become a risk level 2 for next licensing period if TCS foods will be hot held for sale. A commercial hot holding equipment must be used. Provide make and model numbers of the units that will be used. |
