A consultation inspection was conducted 7/1/2020 for two reasons: 1. COVID - Proper COVID protocols were discussed with the PIC (masks, hand washing, cleaning, social distancing, and customer over-crowding). 2. New menu - The PIC is considering new menu items. BBQ (ribs, chicken, pork, brisket, beans, cole slaw, mac n cheese, fries, etc.) will be featured in the near future. All meats will arrive pre-cooked, eliminating the need for a smoker. There will be no delivery or catering. The FSO will maintain a risk level 3 license. Foods will be warmed each day based on expected sales and hot-held during dinner service. "Left-overs" will be discarded at the end of each night. There will be no cooling of foods for service the following day. |
