[?] A summary of the violations found during the inspection are listed below.

3717-1-03.4(H)(1) / Ready-to-eat, time/temperature controlled for safety food - disposition.
Critical Ready-to-eat, TCS food not properly discarded when required. Observed operator made sauces with dates exceeding the 7 day discard per the food code. All TCS foods shall be discard 7 days after opening from original package or preparation. In-house made sauces shall be considered TCS until documentation can be provided. PIC stated this will be corrected.

3717-1-03.4(I)(2) / Time as a public health control - four hour time limit
Critical Improper use of time as a public health control (4 hours). Observed cheeses and burger to be holding above 41 degrees F without proper time marking at the time of inspection. Per the licensing inspection, PIC was to be using Time instead of Temperature for food safety on all TCS food toppings holding on ice. Provide a procedure to the licensor for review and approval. Ensure staff is following procedure.

Notes:
1) Provide a completed commissary agreement (provided with inspection email) form with details regarding the Ohio Department of Agriculture Processing or Warehouse Registration. This is required to ensure compliance with approved source rules.
2) Submit a Time instead of Temperature for Food Safety procedure for the Ice bath holding process used during operation.
3) Ensure a Vomit and Diarrheal clean-up kit and procedure is available.
4) If the mobile smoker is to be used with the Mobile FSO license, the smoker trailer will need to be inspected and included on the equipment list and layout.
