3717-1-03.4(H)(1) / Ready-to-eat, time/temperature controlled for safety food - disposition.
Critical Corrected During Inspection Observed multiple ready-to-eat, TCS food (feta cheese 11/19, meatballs 11/19, anchovies No date) not properly discarded when required. Observed items in the pizza prep line and salad prep cooler. Manager was able to identify the issue and the food was discarded at the time of inspection.

3717-1-04.8(E)(3) / Single-service articles and single-use articles - storage.
Corrected During Inspection Observed single-service and single-use articles (opened unfolded pizza boxes) not protected from contamination. To prevent contamination to food contact surfaces of the food containers, keep the pizza boxes in the protective plastic or store inverted. Manager was able to identify the violation and was able to correct the violation at the time of inspection.

Corrected During Inspection Re-use of single-service or single-use articles as scooping utensils in the Parmesan cheese blend containers in beverage cooler. Manager was able to identify the violation and was able to correct the violation at the time of inspection.

All violations observed at the time of inspection were able to be corrected by employees with limited guidance from the inspector. All violations and notes will be rechecked at the next Standard Inspection.

Notes:
1) Hair Covering are required for employees with long facial hair and loose ponytails (braided and locks) when working with foods.
2) Only a plain banded ring is permitted to be warn when preparing foods. All other jewelry, including smart watches and bracelets, shall not be warn when preparing foods and prepping food orders/containers.
