Management maintains a written employee illness and personal hygiene policy that is part of employee orientation. PIC demonstrated good knowledgeability in food safety by correctly answering food safety questions in detail. Date marking procedures generally appear sound. Ensure that each and every ready-to-eat, TCS food item (ie. cut lettuce) is discarded if not used by the date marked. RTE, TCS foods are cooled in small containers. Observed condensation on the interior surfaces of equipment containing RTE, TCS foods stored in the walk in cooler. Lids to these containers were tightly sealed at the time of inspection. Minimize the time these food spend in the temperature "danger zone" (41 to 135 degrees Fahrenheit) by cooling them quickly. Lids may be vented while cooling, then resealed after food has been allowed adequate time to cool. Observed beverage containers air drying after warewashing. |
