PIC unable to demonstrate knowledge by having no critical violations.
3717-1-02.2 (C )/Hands and arms: when to wash
Food employee(s) did not wash hands when required. Due to the MFSO not having water, hand were not able to be washed when required.
3717-1-05.1(O)(1)/Using a handwashing sink - accessible at all times
Handwashing sink not accessible due to no water available, the MFSO hand washing sink as not accessible at times of operation.
3717-1-05(H)/Capacity.
Water source and/or hot water capacity not sufficient. Water supply shall be checked before operation at each event. Not having water available in MFSO is a reason to close/cease food service operations.
3717-1-02.2(G)/Jewelry - prohibition.
Food employees wearing jewelry on arms or hands during food preparation.
Comments
This follow-up inspection was completed during the KSU Community Food Truck Series (2PM-5PM).
The violations documented on previous report were corrected.

The Mobile food service operation (MFSO) was having difficulties with the generator but was able to get it running at the time of inspection.
All equipment and food were able to remain at acceptable temperatures and were safely cooled/reheated quickly.
Discussed proper cleaning of equipment and utensils and cold and hot holding temperatures with the person-in-charge (PIC).

All preparation, storage, cooling and reheating shall be be completed on the mobile trailer.
All TCS foods shall be properly labeled and date marked at the preparation site.
Foods are not to be prepared or stored in a residential household. Foods stored and prepared within a household shall be considered from an Unapproved source.
Documentation shall be provided regarding the Warehouse or processor location used by the MFSO.
