3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed opened bag of hard boiled eggs dated for the package date. When the package is opened it must be used within 7 days and date marked unless a product assessment is provided.

Critical Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed open bag of cooked chicken without a date. PIC stated they received it open and there was no date. Stanton Middle Schools distributes food to schools and shall date mark opened TCS products.

Equipment components are not intact, tight or properly adjusted. Observed ice build-up throughout the reach-in freezer.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Observed an accumulation of residue and debris on the air drying rack, hot holding cabinet, and gaskets for the refrigeration unit.
