[?] A summary of the violations found during the inspection are listed below.

3717-1-03.2(M) / Wiping cloths - use limitation.
Corrected During Inspection Improper use and/or maintenance of wiping cloths. Observed wiping cloth being used as a prep surface (pouring bulk sauces into indivdual size containers). PIC discussed wiping cloth usage with employee.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Corrected During Inspection Observed cart near the three compartment sink and the air drying racks above the three-compartment sink with an accumulation of food residue and debis. PIC removed the cart from the facility and stated the cart belongs to catering kitchen and PIC stated the racks will be cleaned prior to using today.
