[?] A summary of the violations found during the inspection are listed below.

3717-1-03.4(F)(1) / Time/temperature controlled for safety food - hot and cold holding.
Critical Observed TCS foods (cooked potatoes, cooked beef) were not being held at the proper temperature at the time of inspection.
Except during preparation, cooking, or cooling, or when time is used as a public health control, TCS food shall be held at 135°F or above (except for those roasts that are cooked as required may be held at 130° F), or at 41°F or less.

3717-1-04.4(A)(1) / Equipment - good repair and proper adjustment.
Observed tall upright reach in cooler was not maintaining TCS at an acceptable temperature at the time of inspection.
Equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code. Repair, adjust, or replace the tall upright reach in cooler so that all refrigerated TCS food is maintained at an acceptable temperature that is 41°F or less.
3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Observed equipment component (door gasket to small prep cooler) was not intact at the time of inspection.
Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications. Replace the torn gasket to the small prep cooler.
3717-1-06.2(E) / Handwashing signage.
Repeat Observed no handwashing sign posted at handwashing sink in the men's restroom at the time of inspection.
A sign or poster that notifies food employees to wash their hands shall be provided at all handwashing sinks used by food employees.

Pre-existing non-commercial food equipment in the facility is approved for use as long as it continues to function properly and is maintained clean. All newly purchased equipment shall be commercial grade. Contact the City of Kent Health Department for approval before placing any new equipment into use.
