The following violation(s) have been corrected since the last inspection.
3717-1-06.2(C)/Handwashing sinks - hand drying provision.
No towels or drying device at the handwashing sinks.
3717-1-03.4(E)/Cooling methods - temperature and time control.
Improper method for cooling TCS foods (rice).
3717-1-06.4(K)/Controlling pests.
Observed flying insects near the warewashing area, near the dry storage rack, and at the dirty wiping cloth bag.
3717-1-03.2(M)/Wiping cloths - use limitation.
Improper use and/or maintenance of wiping cloths. Observed multiple soiled wiping clothes being left out on prep surfaces.
3717-1-06.4(B)/Cleaning - frequency and restrictions.
Floors, walls, and area around the grills and where the pizza oven used to be are not maintained clean. Observed a build-up of grease in this area. Observed grease building up on the white tank and the ceiling above the tank in between the hoods. PIC stated the hood cleaning company is scheduled to be out for service on thursday.
3717-1-04.5(A)(3)/Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Observed build-up of grease and debris on multiple pieces of equipment at the cook and prep line (rice warmers,griddles, prep tables, lids, etc.).
