3717-1-05.1(E) / Backflow prevention device - design standard.
Critical Observed no backflow prevention device installed on the hose attached to the water supply system for the service sink.
A backflow or backsiphonage prevention device installed on a water supply system shall meet American Society of Sanitary Engineering (ASSE) standards and as referenced in the Ohio plumbing code for installation, maintenance, inspection, and testing.
3717-1-05.1(O)(2) / Using a handwashing sink - other uses prohibited.
Critical Handwashing sink behind bar is being used for purposes (dump sink) other than handwashing.
A handwashing sink may not be used for purposes other than handwashing.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Observed accumulated grease in catch tray for flat top. Observed grease and dust accumulation on vent covers for hood. Observed accumulated food debris at the back of the prep cooler and food residue on the microwave interior..
Nonfood-contact surfaces of equipment shall be kept clean. Clean grease, dust, and food residues from all equipment and provide regular cleaning such that all equipment surfaces are clean to sight and touch.

Operation appears cleaner since the last standard inspection. Continue to work on cleaning in areas that may be easily overlooked.
No temperature problems were noted at the time of inspection. Recommend weekly calibration for metal stem thermometer.
Discussed proper food handling of RTE foods (burgers, pickles) to reduce risks of contamination.
