3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked (spinach, meatballs, and sausage). Education was provided to the PIC to improve date marking procedures and the violation was corrected at time of inspection.

3717-1-04.2(G)(1) / Food temperature measuring devices - availability
Corrected During Inspection Food thermometer not readily accessible because it had no working batteries.

3717-1-04.8(A) / Equipment and utensils - air-drying required.
Equipment and utensils are not being air dried. Food storage containers were stacked together wet without proper air drying.

Open (not folded) pizza boxes waiting to be used are stored incorrectly exposing to potential contamination.

3717-1-04.4(B) / Cutting surfaces.
Repeat Cutting boards cannot be effectively cleaned and sanitized due to excessive scoring.

3717-1-06.4(N) / Maintaining premises - unnecessary items and litter.
Repeat Unnecessary or nonfunctional items stored in the closet near the pizza oven (paint, etc.).
