[?] A summary of the violations found during the inspection are listed below.

3717-1-02.4(C)(11) / PIC: duties - ensure employees are proplery sanitizing cleaned equipment and utensils
Critical PIC not ensuring employees are properly sanitizing equipment and utensils and monitoring of sanitizer parameters. Employees shall break down the slicers every 4 hours and discontinue wiping down equipment in place with sanitizer wiping clothes. Ensure food contact surfaces are cleaned prior to using the sanitizer wiping clothes.

3717-1-02.4(A)(2) / PIC - Manager Certification
Facility does not have an employee with manager certification in food protection.

3717-1-03.5(C)(1) / Food labels - packaged food
A food packaged in the facility not labeled. Observed cabbage wrapped in clear bags with no labels on isplay at produce area.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Observed gaskets/doors/door handles and air drying rack not maintained clean. Damaged gaskets shall be repaired to allow for easy cleaning.

3717-1-06.4(A) / Repairing.
Observed ice build-up in the walk-in freezer near the dairy area in the back. Ensure products are not being stored under leaking condensation lines or ice build-up, until repairs are made.

The facility shall have an employee with manager certification in food protection that has managerial duties at the establishment.
Ensure employee belongings and beverages are stored in designated locations away from the operation's products.
Ensure weather stripping for back receiving doors are in good condition to prevent pest entry.
Bottom shelves for shelving units shall be installed at least 4 inches off the floor to allow for cleaning.
Ensure damaged areas of walls, flooring, and ceilings are repaired.

The violations documented shall be corrected and will be checked during next standard inspection.
