3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked (pork, feta, eggs). Education was provided to improve date marking procedures. The PIC immediately and voluntarily discarded the food once the violation was identified.

3717-1-06.2(E) / Handwashing signage.
Corrected During Inspection Handwashing sign not posted.

3717-1-03.2(K) / In-use utensils - between-use storage.
Corrected During Inspection In-use utensils improperly stored. Cheese scoops were stored with the handles in contact with food.

Comments
Proper COVID protocols were discussed with the PIC (masks, signs, hand washing, cleaning, social distancing, employee screening, etc.).
The FSO is currently going through a Facility Review due to new equipment and kitchen renovations. The renovations are nearly complete, but there are several areas that still are required to be sealed (FRP, walk in cold holding unit, etc.).
The PIC is very knowledgeable regarding proper food safety.
Very clean facility.
