3717-1-02.4(C)(14) / PIC: duties - ensure employees are properly trained in food safety, including food allergy awareness.
Critical Corrected During Inspection Person in charge did not ensure their employees are properly trained in food safety. A large amount of food was stored in the cold holding units well beyond acceptable dates indicating a lack of proper employee training. Education was provided to improve food safety knowledge.

3717-1-03.4(H)(1) / Ready-to-eat, time/temperature controlled for safety food - disposition.
Critical Repeat Corrected During Inspection Ready-to-eat, TCS food not properly discarded when required. A large amount of food was stored in the cold holding units well beyond acceptable dates (ham prepared 1/12, chicken prepared 1/9, tomatoes prepared 1/15, steak prepared 12/14, hummus prepared 1/2, gyro prepared 1/9). The PIC immediately and voluntarily discarded the food once the violation was identified and education was provided to improve procedures going forward.
