[?] A summary of the violations found during the inspection are listed below.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Corrected During Inspection Observed refrigerated, ready-to-eat, TCS foods (creamers) not properly date marked at the time of inspection. PIC was using an unapproved date marking method (end of the week discards products). PIC properly date marked items at the time of inspection.

3717-1-03.2(M) / Wiping cloths - use limitation.
Improper use and/or maintenance of wiping cloths. Observed multiple wet wiping clothes stored on the counters at the time of inspection. Wet wiping clothes used for cleaning or sanitizing shall be stored in the correct solution and concentration.

3717-1-03.2(K) / In-use utensils - between-use storage.
In-use utensils improperly stored. Observed spoons used for drink preparation are being stored in a container of room temperature water. If spoons are to be stored in water the water must have a temperature above 135 degrees F or a dipping well may be used.

3717-1-04.8(E)(3) / Single-service articles and single-use articles - storage.
Single-service and single-use articles (beverage cups removed from original packaging) not protected from contamination and being stored or displayed on the preparation counter at the time of inspection.

3717-1-04.1(H) / Nonfood-contact surfaces - cleanability
Nonfood-contact surfaces not easily cleanable. Observed a crack in the preparation table (granite) that allows for liquids to accumulate and leak through onto products on the shelf below.

3717-1-04.5(D) / Nonfood-contact surfaces - cleaning frequency.
Unclean nonfood-contact surfaces. Observed drying rack above the 3-compartment sink and the area around the drying rack with an accumulation of food debris and residue at the time of inspection.

3717-1-06.4(N) / Maintaining premises - unnecessary items and litter.
Unnecessary or nonfunctional items on premises. Observed multiple pieces of equipment that are in disrepair and are no longer used that shall be repaired or removed from the facility. Employee belongings shall be stored in a designated location and away from the operation's items.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Facility not maintained clean. Observed the floor in the service and preparation area with accumulation of debris, food debris and dirt along the permiter and under equipment. Items shall be stored 6 inches off the fllor to allow for easy cleaning.
