Regarding complaint:
A large amount of grease/oil was documented by a Kent Environmental Tech in a sewage line shared by Bob Evans. To limit the amount of grease/oil that enters the sewage line, a complaint inspection was conducted at Bob Evans on 8/8/14 to verify the proper use of a grease trap. During the inspection on 8/8/14, the Bob Evans manager was unable to produce documents showing the last time their grease trap was serviced. It was requested that Bob Evans produce documentation showing the last time the grease trap was serviced and/or have the grease trap serviced prior to 8/13/14.

Bob Evans does have a separate storage container near the dumpster for grease/oil. Also, ware washing procedures limit the amount of grease/oil that enters the ware washing machine. If the grease trap is serviced on a regular basis, significant amounts of grease/oil should not enter the sewage lines.
