3717-1-04.2(I) / Sanitizing solutions - testing devices.
Critical At the time of inspection, operator was unable to locate a test kit for measuring the concentration of the sanitizer.
A means of measuring sanitizer concentration is important to ensure a concentration that is high enough to limit the growth of harmful organisms, but low enough that it is not toxic. A test kit or other device that accurately measures the concentration in PPM (mg/L) of sanitizing solutions shall be provided.
3717-1-07.1(B) / Restriction.
Critical Corrected During Inspection Observed unnecessary chemicals (can of insecticide labelled for household use only) being stored on the premises (behind the bar).
Only those poisonous or toxic materials that are required for the operation and maintenance of a FSO or RFE shall be allowed. Operator removed the can of insecticide at the time of inspection.

3717-1-06.4(D) / Cleaning ventilation systems, nuisance and discharge prohibition.
At the time of inspection, observed an accumulation of dust and grease on vent covers for the hood system over the cooking range.
When food is being prepared on the cooking range, it may become contaminated should grease or dust drip into it from the vent covers. Intake and exhaust air ducts shall be cleaned and filters changed so they are not a source of contamination. To protect against contamination, clean all grease and dust from the vent covers.

Observed an approved backflow prevention device was installed on the hose connected to the water supply in the downsatairs storage are.
Sanitizer concentration should be between 200-400 ppm for proper sanitization when using quaternary ammonia sanitizer such as Steramine.
Non-commercial equipment (microwave, mini-fridge, etc) may be used as long as it is kept clean and continues to function properly, however all newly purchased equipment shall be commercial grade. Call the City of Kent Health Department before placing any new equipment into use.
