3717-1-06.1(M) / Outer openings - protected.
Repeat Observed an outer opening door without proper protection against the entry of insects and rodents. Observed back door to the kitchen was not self-closing at the time of inspection.
To prevent contamination, outer openings of an FSO shall be protected against the entry of insects and rodents as specified in this rule. Provide the back door to kitchen to be self-closing, self latching and tight-fitting.
3717-1-06.4(B) / Cleaning - frequency and restrictions.
Observed a build-up of dirt and debris along the perimeter (wall and floor junctures) of the kitchen at the time of inspection.
To prevent health hazards, the physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed. Clean and maintain the floor and wall junctures along the perimeter.

Observed PIC to be very knowledgeable on food safety by answering questions during inspection.
Recalled lettuce was properly handled and was already pulled at the time of inspection.
Ensure hand sink is only being used for handwashing.
The violations documented shall be corrected as soon as possible and will be checked during next standard inspection.
