Comments
Per conversation with the owner, the hot water supply was tested and the results were concerning. The Dish machines was not able to reach 120 degrees F. 80 degree F washing temperature would be a critical violation according to the Ohio Food Code. The temperature provided at the hand washing sink was not able to meet the 100 degree F requirement. Due to the loss of one of the large hot water heaters in the attic, the FSO is only provided with 9 KW when the 28 KW is required at peak performance. The KCHD is recommending that the FSO remains closed until the hot water supply can be provided to meet the Ohio food code requirements. See Spec attached to the inspection email.
