3717-1-05.3(I) Repeat Observed improper draining of condensation from the walk-in cold holding unit and ice bin near the ice machine at the time o inspection. A container is being used to collect the water off the condensor. To meet the requirements of this rule, condensate drainage and other nonsewage liquids and rainwater shall be drained from point of discharge to disposal according to law. Install a drainage line off the condensor and ice bin with a proper air gap that is directed to a floor drain. ![]() |
3717-1-06.4(B) Repeat Observed a build-up of dirt and debris at the following locations at the time of inspection: 1) floors under the cooking line. 2) floors under the ice machine. 3) floors under the bar area. 4) other hard to reach areas within the facility. To prevent contamination and possible pest infestation, the physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed.
