[?] A summary of the violations found during the inspection are listed below.

3717-1-04.2(A) / Equipment - cooling, heating, and holding capacities.
Critical Observed inadequate equipment for cold holding foods. TCS foods are not provided with adequate cold holding equipment to maintian food temperatures at 41 degrees F or below.
Equipment for cooling, heating, or holding cold and hot TCS food shall be sufficient in number and capacity to provide food at the required food temperatures. Provide adequate cold holding equipment on the service line to hold TCS foods before being served. TCS foods shall be held at the accpetable temperatures. A procdure can be written regarding the use of time instead of temperature until proper cold holding is provided.
3717-1-05.3(C) / Backflow prevention.
Critical Observed a direct connection between the sewage system and a drain originating from equipment in which foods are washed and prepared in.
A direct connection may not exist between the sewage system and a drain originating from equipment in which food, portable equipment, or utensils are placed. Provide proper back flow prevention on the designated food preparation sink. All work shall be completed by a licensed plumber and under permit.
3717-1-06.4(K) / Controlling pests.
Critical Observed the presence of rodents under the stove top at the time of inspection.
The presence of insects, rodents, and other pests shall be controlled by routinely inspecting incoming shipments of food and supplies, and routinely inspecting the premises for evidence of pests, using methods such as trapping devices or pesticides, and eliminating harborage conditions.

3717-1-04.1(KK) / Food equipment - certification and classification.
Observed cooking equipment (range) is not approved by a recognized testing agency.
Food equipment that is acceptable for use in a FSO or RFE shall be approved by a recognized food equipment testing agency. Replace range with equipment that meets this rule.
3717-1-06.4(N) / Maintaining premises - unnecessary items and litter.
Observed unnecessary or nonfunctional items on the premises.
The premises shall be free of Items that are unnecessary to the operation or maintenance of the FSO or RFE such as equipment that is nonfunctional or no longer used and litter.

Observed multiple food employees washed hands upon arrival to work. All food that was being delivery from Stanton Middle school was observed to be at the proper temperature at the time of inspection.
