[?] A summary of the violations found during the inspection are listed below.

3717-1-05.1(O)(2) / Using a handwashing sink - other uses prohibited.
Critical Corrected During Inspection Handwashing sink in the back prep area is being used for purposes other than handwashing. Observed jalapeno and other food debris in the hand sink and PIC stated the sink is used to drain produce. Discussed handwashing sink useage with PIC.

3717-1-02.4(A)(2) / PIC - Manager Certification
Facility does not have an employee with manager certification in food protection.

3717-1-04.8(E)(3) / Single-service articles and single-use articles - storage.
Single-service and single-use articles not protected from contamination. Observed toliet paper exposed on the shelving in the prep area on the back wall.

3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Equipment components are not intact, tight or properly adjusted. Observed walk-in freezer in disrepair.

3717-1-04.5(D) / Nonfood-contact surfaces - cleaning frequency.
Non-food contact surfaces not cleaned at the required frequency. Observed an accumulation of food residue and debris on the thermometer and container next to the turbo chef equipment, and knife storage container on the make line, and door handle/door for the prep cooler under the turbo chef.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Floors in the back prep/warewashing area and around/under equipment at the front make line not maintained clean. If floors are no longer smooth and easily cleanable they shall be replaced.

Ensure the following items below have been completed (from facility review). These will be checked during next standard inspection.
1) Provide a coved base finish throughout the FSO prep and service areas. Caulk or install coved base molding at all floor, wall and equipment junctures.
2) Caulk or seal wall and countertop/cabinet junctures around the customer self service area.
3) Main back flow preventer looks to be in need of service. Service main backflow and provide documentation of service record.

The violations documented shall be corrected and will be checked during next inspection.
