Critical Corrected During Inspection Improper use of time as a public health control (4 hours). Observed containers of tcs products past the 4-hour hold time. PIC voluntarily discarded the products.

3717-1-04.8(E)(3) / Single-service articles and single-use articles - storage.
Single-service and single-use articles not protected from contamination. Observed exposed paper towels, sandwich wraps, etc. on shelving racks.

3717-1-04.5(D) / Nonfood-contact surfaces - cleaning frequency.
Observed an accumulation of food residue and debris on warming equipment above prep lines, on interior cold holding units (bottom shelves, gaskets, door handles, doors), gaskets on the freezer units near the fryers.
