[?] A summary of the violations found during the inspection are listed below.

3717-1-05.1(O)(2) / Using a handwashing sink - other uses prohibited.
Critical Observed the handwashing sink at the front service line was being used for purposes other than handwashing. Handwashing sink was used to store wiping cloth buckets and other items at the time of inspection
To prevent contamination, a handwashing sink may not be used for purposes other than handwashing. Discontinue using the designated hand washing sink for any other purpose then hand washing.

3717-1-06.1(B) / Floors, walls and ceilings - utility lines.
Observed drainage pipes from the ice carts were improperly installed to be on the floor and draining water on to the floors at the time of inspection. Observed drainage pipes from the walk-in condenser units to be draining on to the floor tiles at the time of inspection.
Utility service lines and pipes may not be unnecessarily exposed, may not be installed on the floor, and shall be installed so they do not obstruct or prevent cleaning of the floors, walls, or ceilings. Drainage pipes shall be draining directly into the floor drains to prevent damage to the flooring. Constant water on the floors from equipment drainage pipes provides a source of water for pests. Install the drainage lines to drain directly into floor drains with proper air gaps.
3717-1-06.1(I) / Light bulbs - protective shielding.
Observed heat lamp bulbs within the pretzel hot holding equipment that were not properly shielded or coated at the time of inspection.
To prevent contamination, light bulbs shall be shielded, coated, or otherwise shatter-resistant in areas where there is exposed food, clean equipment, utensils, or linens, or unwrapped single-service or single-use articles and does not apply in areas used only for storing food in unopened packages. An infrared or other heat lamp shall be protected against breakage by a shield surrounding and extending beyond the bulb so that only the face of the bulb is exposed.
3717-1-06.2(E) / Handwashing signage.
Observed no handwashing sign was posted at handwashing sink located at the front service line at the time of inspection.
To promote proper hand washing, a sign or poster that notifies food employees to wash their hands shall be provided at all handwashing sinks used by food employees. Provide a hand washing sink at this sink.
3717-1-06.4(B) / Cleaning - frequency and restrictions.
Observed a build-up of dirt and debris on the floors under the ice machine at the time of inspection.
The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed. Clean the floors under the ice machine.

Overall, the facility was very clean and organized at the time of inspection
Clean side of ware washing may need to be adjusted so water is properly draining and not contaminating the clean utensils and equipment.

Please provide the policy and procedures for the transferring of foods to other school kitchens.
