The consumer advisory statement at the bottom of the menu is acceptable, however the consumer is not properly advised of the risk of consuming undercooked eggs.
Other food items which may be served undercooked have been appropriately designated on the menu with an asterisk that refers customers to the consumer advisory statement at the bottom of the menu. Designate egg menu items with an asterisk in the same fashion.

Comments
Upon hire, operation furnishes each new employee with an employee handbook that includes a written illness policy. Illness policy is reviewed in a meeting with employees every 2 years.
Observed proper glove use and handwashing at the time of inspection.
PIC demonstrated excellent knowledge of food safety, and operation is in the process of providing formal safe food handling education for employees.
Currently Sysco supplies most of the food for this operation. Smaller quantities of other food items come from approved sources as well.
Operation maintains a written procedure for using time as a public health control for eggs. An electronic timer is used to monitor a 3 hour time limit for eggs. Include a statement in the written procedure that unused eggs are discarded after held for 3 hours.
Operation calibrates the metal stem thermometer weekly and maintains temperature logs for refrigerated equipment. Hanging thermometers for refrigerated equipment are checked regularly for accuracy by comparing to the calibrated metal stem thermometer.
