[?] A summary of the violations found during the inspection are listed below.

3717-1-02.2(C) / Hands and arms: when to wash
Critical Observed food employee(s) did not wash hands in situations that specifically require them to do so at the time of inspection.
To prevent contamination, food employees shall clean their hands and exposed portions of their arms after switching between working with raw food and with ready to eat food; before donning gloves for working with food; and after other activities that contaminate the hands.

3717-1-04.1(H) / Nonfood-contact surfaces - cleanability
Corrected During Inspection Observed nonfood-contact surfaces (taped spatula handles) were not designed and constructed to allow easy cleaning or maintenance at the time of inspection.
Nonfood-contact surfaces shall be designed and constructed to allow easy cleaning and to facilitate maintenance. Remove tape from spatula handles so that they can be effectively cleaned and sanitized. If broken, spatulas shall be discarded and replaced new. PIC discarded a spatula with a taped handle at the time of inspection.
3717-1-04.8(A) / Equipment and utensils - air-drying required.
Repeat Observed equipment and utensils were not being air dried at the time of inspection.
After cleaning and sanitizing, equipment and utensils shall be air-dried or used after adequate draining before contact with food and utensils, and may not be cloth dried.
3717-1-06.4(F) / Drying mops.
Repeat Observed mops being dried using an unapproved method (stored on floor outside the service sink) at the time of inspection.
After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies. Hang mops to dry by using the provided mop hangers.

Observed time/temperature controlled for safety (TCS) foods were appropriately datemarked at the time of inspection. Wet wiping cloths were stored submerged in sanitizer buckets between uses.
Complaint on 18-Aug-2014 :
In regards to complaint: Observed employees did not wash hands before donning gloves at the time of inspection. Ensure all employees working with food wash their hands after changing tasks and before donning gloves. Observed TCS foods were held at acceptable temperatures and properly stored at the time of inspection. Non-boneless wings were stored under refrigeration. Fish and boneless wings were stored frozen and cooked in the fryer to an acceptable temperature. Fryers are cleaned and oil is changed on a weekly schedule or more frequently if needed. Procedures appear sound. Observed warewashing equipment was functioning properly at the time of inspection. Management reported no recent employee illnesses.
