Comments
In Order for a Food Service license to be issued the following must be completed:
Provide a proper means to plug the 3 compartment sinks. All 3 sink basins shall be able to be filled for proper ware washing.
Polyurethane the under side of the counter. Any exposed wood shall be sealed to prevent water damage from daily cleaning and use of the cafe equipment.
Caulk and seal the gaps between all counter tops (front service and coffee prep) and the wall junctures and include the underside of the counter top where it attaches to the support walls.
Caulk along the 3 compartment sink along the sides that are against the wall.
Provide a mop hanger at the mop sink.
Provide a proper metal stem temperature measuring device (0-220 degrees F)
Seal the Hand washing sink to the wall. The gap needs to be covered with a proper L shaped covering.
The base of the wooden shelving unit under the Coffee brewing/preparation counter shall be installed in a way that allows the floors and equipment junctures to be easily cleanable. The way it is currently installed will allow for locations of food debris accumulation in had to reach/clean locations. Provide a smooth, durable and easily cleanable finish to the base for the set-up.
All cold holding equipment shall be on casters or installed to be at least 6 inches above the floor.
Only NSF or equivalent equipment and utensils will be permitted to be used. Serve-One equipment will not be approved unless proof of approval can be provided.
Both rest room doors shall be self closing and latching.
A means to separate the public area from the cafe preparation area is required.
Sneeze guards may be required in the future to protect the preparation area from customer contamination. This will be reviewed closer once in operation.
