[?] A summary of the violations found during the inspection are listed below.

3717-1-05.1(O)(2) / Using a handwashing sink - other uses prohibited.
Critical Corrected During Inspection Handwashing sink is being used for purposes other than handwashing. Observed front hand sink being used as a dump. PIC removed colander from hand sink.

3717-1-04.6(B) / Sanitizing frequency of utensils and food-contact surfaces - before use and after cleaning
Critical Corrected During Inspection Utensils and food-contact surfaces of equipment not sanitized at the required frequency. Utensils and equipment were only being washed with detergent. PIC filled up the last bay in the three-comparment sink with sanitizer water and is going to use a sanitizer spray bottle for surfaces. Utensils shall be warewashed every 4 hours when in use including any containers to hold in-use utensils.

3717-1-03.2(M) / Wiping cloths - use limitation.
Improper use and/or maintenance of wiping cloths. Observed multiple soiled wiping cloths being left out on prep tables.

3717-1-03.2(G) / Washing fruits and vegetables.
Raw fruit and/or vegetables not washed or washed improperly. Employees are not utilizing the food prep sink. Observed prep sink being used as a shelf to store equipment and utensils.

3717-1-04.8(E)(1) / Single-service and single-use articles - storage
Improper storage of single-service and single-use articles. Observed unwrapped stacks of paper towles and toilet paper stored on top of the ice machine.

3717-1-04.2(I) / Sanitizing solutions - testing devices.
No test kit available to measure the concentration of the quat sanitizer (tablets).

3717-1-04.4(F)(2) / Warewashing sinks - cleaning and sanitizing.
Warewashing sink not properly cleaned and sanitized before and after use.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Observed an accumulation of food residue and other debrison the following equipment: on the interior of the cold holding units (gaskets, shelves, doors, etc.), shelving units throughout, bottom shelves of prep tables, inbetween equipment on the grill line, etc. Equipment shall be maintained clean.

3717-1-05.4(P) / Maintaining refuse areas and enclosures.
Improperly cleaned storage area for refuse, recyclables, or returnables. Observed cardboard boxes piled up behind and around the recycling dumpster at the time of inspection. Outside receptacles are shared between the gas Kent fuel and mini mart and eldorados.

3717-1-06.4(F) / Drying mops.
Mops dried improperly in the utility room.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Observed floors throughout the facility not maintained clean. Observed a build-up of grease behind the equipment on the cook line.

3717-1-06.4(D) / Cleaning ventilation systems, nuisance and discharge prohibition.
Ventilation system not maintained. Observed build-up of grease inside the hood system of the pizza oven and on the surfaces above the hood above the equipment on the cook line (fryers, grill).

Please ensure personal food items are kept separate and in a designated location away from the operations.
House made sauces shall be held refrigerated under 41 degrees F and date marked for 7-day use-by unless a product assessment is provided stating sauces are shelf stable.
The violations documented shall be corrected and will be checked during next standard inspection.
