Inspection completed at the Kent Craft Beer Festival Observed the MFSO to be very clean and organized. Staff demonstrated knowledge regarding food safety. Observed proper holding of hot and cold foods. Observed hot water and proper supplies at hand sinks. Recommend reinstalling the hand sink pump so a light switch is not need to be turned on and off each time staff needs to use the sink. Recommend developing a tilt procedure for the breading and container. The breading needs to be replace and container cleaned (wash rinsed sanitized or replaced with clean) every 4 hours. Operator is using processing location at the water street tavern. |
