Comments
In order for a RFE risk class III license to be issued the following must be completed:
1) Seal all the holes and opens in all the walk-in coolers. Seal the areas that has the spray foam exposed.
2) Provide a proper 2 inch air gap on all condensation drainage lines from all cold holding and freezer equipment.
3) All pipes and utility lines shall be at least 6 inches above the floor.
4) Since the emergency fire doors located at the receiving dock are planned to be used a vendor entrance, the doors are required to be tight fitting, self-closing and self latching.
5) Provide hand washing signs at all designated hand washing sinks.
6) Seal or cover the gap between the wall and walk-in produce cooler.
7) Air gap the cold cut cool. Provide a proper drainage line from each condensation unit in cold cut display coolers.
8) Provide a properly calibrated metal stem temperature measuring device.
9) Caulk around the 3 compartment sink drainage pipe and wall juncture. (where the drainage pipe enters the wall.
10) Verify that the 3 compartment sinks are draining to an approved grease trap. Check the man holes outside and pump the system if needed.
11) All cold holding equipment shall be up and running. All cold foods shall be holding a 41 degrees F or below.
12) Provide a ASSE 1011 on all hose bibb connections. ( only one was observed in the mop storage area.
13) Provide a final building and fire inspection. A Certificate of Occupancy will need to be provided.
14) Submit a signed application and license fee for the amount of $973.00 for License number JSMH-9M2KLM.
