Critical No person in charge present in food facility during inspection.

3717-1-02.4(C)(11)
Critical PIC not ensuring employees are properly sanitizing equipment and utensils and monitoring of sanitizer parameters. Due to three-compartment in disrepair, the PIC allowed employees to wash equipment and utensils in the mop sink. Equipment and utensils not being properly warewashed.

Critical Person in charge did not ensure employees were effectively cleaning their hands as required. Observed employee quickly rinsing hands with dish soap in the three-compartment sink and going back to the cook line.

Critical PIC unable to demonstrate knowledge of cleaning and sanitizing. Discussed proper cleaning and sanitizing of equipment and utensils. PIC was unaware the need to clean and sanitize equipment that touch TCS foods every 4 hours.

Plumbing system not properly maintained or repaired. Observed clogged drain line for the three-compartment sink. The lid on the grease interceptor was removed and grease interceptor was recently cleaned out but the PIC stated that it overflows if the water is turned on. The drain line appears to also be clogged farther down from the grease interceptor. PIC called a drain company to start servicing the interceptor (time frame: now-4 will arive to service).

The flooring around the grease interceptor is damaged and not properly sealed.

Comments
The consultation inspection was conducted to verify the drain and grease interceptor for the three-compartment sink was functioning properly.

Observed the drainage for the three-compartment sink still in disrepair. Observed grease interceptor lid removed and employees attempted to clean and clear the drain lines.
The PIC called a drainage company to come service the grease interceptor and drain line.
The PIC voluntarily closed the retail food establishment.
The PIC plans to reopen once the three-compartment sink is function properly and all equipment and utensils in the facility are warewashed (wash,rinse,sanitize,air dry).
An email shall be sent to the Health Department when the establishment plans to reopen.

A follow-up inspection will occur on Monday, January 10, 2022.
