[?] A summary of the violations found during the inspection are listed below.

3717-1-04.2(I) / Sanitizing solutions - testing devices.
Observed no test kit available for measuring the concentration of the quaternary sanitizer (steramine tablets) at the time of inspection.
To ensure proper sanitization, a test kit or other device that accurately measures the concentration in PPM (mg/L) of sanitizing solutions shall be provided. Provide proper test strips for the sanitizer being used in the operation.
3717-1-05(H) / Capacity.
Observed the water source and system not of sufficient capacity to meet the hot water demands at the time of inspection. The FSO was observed with no hot water generation to all sinks. The operation was currently not operating.
To ensure proper cleaning and sanitation, the water source and system, hot water generation, and distribution systems shall be of sufficient capacity to meet the peak water and hot water demands of the FSO. The PIC stated that a professional plumbing company will be contacted.
