3717-1-03.2(A)(2) / Preventing contamination from hands - bare hand contact
Critical At the time of inspection, observed a tortilla shell contacted the ungloved portion of a food employee's arm during food preparation.
Hands and exposed portions of arms are a common vehicle for the transfer of potential contaminants to food. Except when washing raw fruits and vegetables, food employees may not contact exposed, ready-to-eat food with their bare hands and shall use suitable utensils. Although the same food employee was observed properly washing hands prior to donning gloves for food preparation, special care shall be taken to ensure that there is no bare skin contact with ready-to-eat food.

3717-1-05.1(S)(2) / Plumbing system - maintained in good repair.
The plumbing system was not properly maintained. The drain cover for the floor drain directly under the wash compartment of the 3 compartment sink was missing at the time of inspection.
A plumbing system shall be properly maintained. Replace the missing drain cover for this floor drain.
