[?] A summary of the violations found during the inspection are listed below.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. Observed yum yum sauce and swwet and sour sauce at the front service counter above 41 degrees F. PIC will discontinue storing sauce on the countertop unless a product assessment is provided stating the product is safe to be left out at room temperature.

Critical Corrected During Inspection Observed container of fried rice being left out at room temperature next to the griddle. PIC stated the rice warmer is broken and a new one was purchased. PIC stated the rice was just cooked and were waiting to put it in the prep cooler. PIC placed container in the cooler.

Critical Observed flying insects near the warewashing area, near the dry storage rack, and at the dirty wiping cloth bag.

3717-1-02.4(A)(2) / PIC - Manager Certification
Facility does not have an employee with manager certification in food protection.

3717-1-02.4(C)(17) / PIC: duties - ensure the facility has written procedures for responding to vomiting and diarrheal events.

3717-1-06.2(C) / Handwashing sinks - hand drying provision.
No towels or drying device at the handwashing sinks.

3717-1-03.4(E) / Cooling methods - temperature and time control.
Improper method for cooling TCS foods (rice).

3717-1-03.2(M) / Wiping cloths - use limitation.
Improper use and/or maintenance of wiping cloths. Observed multiple soiled wiping clothes being left out on prep surfaces.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Observed build-up of grease and debris on multiple pieces of equipment at the cook and prep line (rice warmers,griddles, prep tables, lids, etc.).

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Floors, walls, and area around the grills and where the pizza oven used to be are not maintained clean. Observed a build-up of grease in this area. Observed grease building up on the white tank and the ceiling above the tank in between the hoods. PIC stated the hood cleaning company is scheduled to be out for service on thursday.

Complaint on 29-Sep-2023 :
An inspection was conducted in regards to a complaint. A standard inspection was also conducted.
Per complainant: Found Rat poop in my food disgusting.
Complaint findings: No evidence of rodent infestation at the time of inspection.
The complaint is now considered closed.

Cutting boards, knifes, in-use utensils shall be warewashed every 4 hours.
The outside grease receptacle shall be maintained clean.
Employee belongings and items shall be stored away from the operation's items. Recommend providing shelving/areas where employee's can store belongings.

The violations documented are to be corrected and will be checked during the scheduled follow-up inspection.
