Critical Corrected During Inspection Chlorine sanitizing solution at incorrect concentration. Observed 0 ppm of chlorine sanitizer at the three-compartment sink. PIC properly set-up the sanitizer compartment of three-compartment sink.

3717-1-04.8(E)(3) / Single-service articles and single-use articles - storage.
Single-service and single-use articles not protected from contamination. Observed exposed paper towels, paper plates, and other single-use items.

3717-1-04.1(H) / Nonfood-contact surfaces - cleanability
Repeat Nonfood-contact surfaces not easily cleanable. Observed wall above the three-compartment sink chipping and paint peeling. Sink shall be sealed to the wall.

3717-1-04.5(D) / Nonfood-contact surfaces - cleaning frequency.
Non-food contact surfaces not cleaned at the required frequency. Observed blue air drying racks not maintained clean. Ensure dishes are being air dried before using.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Flooring under shleving and around items on the floor are not maintained clean. Ensure shelving is installed off the floor atleast 6 inches and ensure products are stored off the floor.

Comments
Ensure all employees that handle food are included in the operation's sick policy.
Any surfaces that are found to be showing signs of rust shall be repaired or replaced.
Sinks shall be used for there intended use, specifically the hand washing and three compartment sink.
Mop water shall be dumped into the mop sink and ensure the food prep sink is being cleaned and sanitized prior to use.
Ensure employee restroom contains a trash can with a lid.
Single use cups shall not be reused as a scoop.

The violations documented are to be corrected and will be checked during next standard inspection.
