Critical Improper cooling of TCS food. The PIC was unable to describe proper cooling of the soups. Discontinue the practice of bulk cooling the soups.

Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked in the preparation cold holding unit (lettuce, tomatoes, burgers).

Handwashing sign not posted in the men's restroom.

Working food containers not properly labeled along the preparation line (bottles of sauce and oil).

Single use cups were stored on the floor of the basement and kitchen.
