PIC unable to demonstrate knowledge of temperatures and times for safe cooling and reheating of soups. Discontinue the practice of bulk cooling/reheating of soups.
3717-1-06.2(E)/Handwashing signage.
Handwashing sign not posted in the men's restroom.
3717-1-03.4(D)/Cooling - temperature and time control.
Improper cooling of TCS food. The PIC was unable to describe proper cooling of the soups. Discontinue the practice of bulk cooling the soups.
3717-1-03.2(D)/Food storage containers - identified with common name of food.
Working food containers not properly labeled along the preparation line (bottles of sauce and oil).
3717-1-04.8(E)(1)/Single-service and single-use articles - storage
Single use cups were stored on the floor of the basement and kitchen.

Non-food contact surfaces of equipment are unclean (shelving, cooking equipment, and cold holding units).

Facility not maintained clean. The floor of the kitchen underneath equipment is not clean.
Comments
The FSO will now heat soups in individual portions when an order comes from the customer.
Bulk cooling/reheating will no longer be done with the soups.
