3717-1-03.4(H)(1) / Ready-to-eat, time/temperature controlled for safety food - disposition.
Critical Corrected During Inspection Observed ready-to-eat, TCS food (hard boiled eggs) that had been date marked was not properly discarded when required at the time of inspection.
To prevent illness, refrigerated, ready-to-eat TCS food that has been date marked in the facility shall be discarded if it: (a) exceeds the temperature or time specified in (G)(1) of this rule, except the time the food is frozen; (b) is in a container or package that does not bear a date or day; or (c) is marked with a date or day that exceeds the time and temperature combination specified in (G)(1) of this rule. PIC voluntarily discarded the outdated product.
3717-1-05.3(C) / Sewage and other liquid waste: Backflow prevention.
Critical Repeat Observed a direct connection between the sewage system and a drain originating from equipment in which food, portable equipment, or utensils are placed. Observed the facility was not provided with a designated, properly installed sink at the time of inspection for preparing ready to eat foods.
To prevent health hazards, a direct connection may not exist between the sewage system and a drain originating from equipment in which food, portable equipment, or utensils are placed unless allowed by the Ohio building code. Provide a food preparation sink that is properly installed with an indirectly connected drainage to prevent contamination to foods. Until this sink is provided, all foods that need to be washed shall be washed at the Stanton Middle School kitchen.

3717-1-06.4(D) / Cleaning ventilation systems, nuisance and discharge prohibition.
Observed the ventilation system above the ovens (exhaust hood) was not being properly cleaned at the time of inspection.
To prevent health hazards, Intake and exhaust air ducts shall be cleaned and filters changed so they are not a source of contamination. If vented to the outside, ventilation systems may not create a public health hazard or nuisance or unlawful discharge.Clean and maintain the exhaust hood above the ovens.

Limitation: Food Service Operation has not been provided with a properly installed Food Processing sink. All food shall be properly washed, prepared, and provided with a date of preparation at the Stanton Middle School before being delivered to this location.

During school field trips, please ensure the proper measures are taken to ensure food safety is acceptable.
Chemicals shall not be stored in an area that is not above food, equipment, utensils, linens, single-service articles or single-use articles.
Poisonous or toxic materials shall be used according to: (a) Law and this chapter; (b) Manufacturer's use directions included in labeling, and, for a pesticide, manufacturer's label instructions that state that use is allowed in a food service operation, retail food establishment, or food handling or processing areas; (c) The conditions of licensing, if licensing is required, for use of the pest control materials; and (d) Additional conditions that may be established by the regulatory authority.
Ensure sanitizer spray is being used properly (according to the manufacturer's label).

The violations documented shall be corrected as soon as possible and will be checked during next standard inspection.
