Critical Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation. Raw chicken was stored improperly in the walk in cold holding unit. The PIC immediately corrected the storage issue once the violation was identified.

3717-1-04.5(A)(1) / Cleanliness of equipment food-contact surfaces and utensils.
Critical Corrected During Inspection Equipment food-contact surfaces or utensils are unclean (deli slicer). The staff immediately cleaned the deli slicer once the violation was identified.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Refrigerated, ready-to-eat, TCS foods not properly date marked (fruit salad with cantaloupe). Education was provided to improve date marking procedures.

3717-1-03.4(H)(1) / Ready-to-eat, time/temperature controlled for safety food - disposition.
Critical Corrected During Inspection Ready-to-eat, TCS food not properly discarded when required. Hot dogs with a discard date of 4/30 were stored in the cold holding unit in the bake room. The PIC immediately and voluntarily discarded the food as soon as the violation was identified.

Critical Corrected During Inspection Improper use of time as a public health control (TILT - time in lieu of temperature policy). Butter was stored outside of cold holding without proper time stamp. The PIC immediately and voluntarily discarded the butter once the violation was identified.

3717-1-06.2(B) / Handwashing cleanser - availability.
Corrected During Inspection No soap at rear handwashing sink.

3717-1-04.8(A) / Equipment and utensils - air-drying required.
Equipment and utensils are not being air dried. Beverage containers were not air dried before stacking wet.

3717-1-04.8(G)(1) / Kitchenware and tableware - handling of single-service and single use articles.
Single-service forks displayed improperly with handles going in opposite direction.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean (cold holding equipment, storage racks and shelving).

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Repeat Floors are not clean throughout the kitchen, especially in hard to reach areas under equipment.

Repeat Physical facilities not maintained in good repair. Multiple surfaces are damaged (floors, walls, coved base) and no longer smooth, durable, and easily cleanable.
