Comments
Per discussion with PIC, measured temperatures in the walk-in were high because of peak hours of operation. TCS foods stored in the walk-in must stay below 41 Degrees F at all times. Repair walk-in cold holding unit as soon as possible. Discontinue using walk-in to store TCS foods until it is repaired.
