Critical Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation. Observed raw shell eggs above ready-to-eat foods in the glass door reach-in cold holding unit. PIC placed eggs on the bottom shelf.

3717-1-03.4(H)(1) / Ready-to-eat, time/temperature controlled for safety food - disposition.
Critical Corrected During Inspection Ready-to-eat, TCS food not properly discarded when required. Observed stuffed cabbage in the glass reach-in cold holding unit and containers of pulled pork in the walk-in without date marks. PIC discarded the TCS foods that did not contain date marks.

Critical Observed flying insects (drain flies) throughout the bar area.

Facility does not have an employee with level two certification (manager level) in food protection.

Repeat Observed glass reach-in cold holding equipment thermometer was missing, located incorrectly, or not easily readable.

Repeat Equipment not approved by a recognized testing agency. Observed small household use fryers on the shelving next to the glass reach-in cold holding unit.

Repeat Equipment components are not intact, tight or properly adjusted. Observed build-up of ice in the walk-in freezer.

Observed food residue and other debris on the shelving units in the walk-in units and the shelving next to the glass reach-in cold holding unit.

Observed floor under equipment and floor drains in the bar area not maintained clean.
